My lab group focuses on developing an understanding of how the pork eating experience is impacted by the production and handling practices applied to the animal and to the product. The goal of my work is important to the pork industry, in ensuring the efficient delivery of a desirable product that consumers will seek to purchase.


My role as a meat scientist is to aid in understanding differences in the eating experience of pork with the goal of providing the consumer with a consistent, safe, desirable product that they feel confident purchasing.
